Catering carriers live or die on fit. A full-size steam pan, a half pan and a nine-by-thirteen dish are three different footprints, and a carrier that is even slightly oversized lets the tray slide, tip and spill on the first corner. So we build these to the pan, and the first question on the quote is which pans you actually run.

Rigid support is the second half of it. A soft-sided bag with a hot, full pan in it deforms as soon as it is lifted, which is how lids come off. A stiffened base and side panels, or a slot-in rigid insert, keeps the tray flat and level all the way to the table. It also stops the foam being crushed at the point where it is doing the most work.

The liner sees more heat here than anywhere else, so a PU-coated liner and welded seams are the sensible default. Hot food also produces steam, and steam in a stitched liner is water in the foam — which is why a carrier that smells faintly of last month’s event has usually been leaking into its own panels for weeks.
